Soften the Mimetic Incorporation. Add all other ingredients except Smoobees. Mix for 4 minutes on medium speed. Add Smoobees and mix on low speed for 1 minute. Put a thin layer of melted Mimetic in the bundt mold and pipe 600gr in each mold.
Bake appr. 35 minutes at 180°C. Demold immediately and let it cool down.
Make a disc and some curls in the Belcolade Noir Selection CT. Whip Ambiante, pipe it in small ball shaped mold and freeze. Optionally, you can spray them with some colored cocoa butter.
Build up: Stick 2 curls on the disk with some tempered chocolate. Place 3 Ambiante balls in between. Soften the Cryst-O-Fil and whip until a creamy texture is obtained. Pipe nice dots next to the Ambiante balls. Finish with a few small dots of Deli Caramel and panning.
