While consumers are always happy to sample good cakes, they may not always know how to describe and evaluate their reactions to the cakes. What’s more, when they are considering the offering, how much of their opinion is influenced by other elements such as location and social environment, or by the product information such as labels, packaging or branding, or based on their previous experience?
Working out what consumers think about is a very difficult task, yet understanding consumer preferences is vitally important to the work we do for and with our customers. That is why we set up our very own sensory analysis laboratory within our Group Research & Services department.
At the Puratos sensory analysis laboratory, finely calibrated instruments and experienced human judges are combined to study biological and psychological responses to flavours, appearances and textures. Then these results are analysed and shared with our customers to help them decide whether proposed finished goods meet the demands and expectations of consumers.
As reliable partners in innovation, we are more than happy to share our methods of analysis and work together on further including Sensory Analysis and training our customers’ in-house teams.

The Sensobus is a unique and fully-equipped sensory analysis lab on wheels that can travel to where consumers shop for food and welcome up to 250 people a day.
