Healthy baking recipes for professionals

We know from our Taste Tomorrow research that more and more people are concerned about their health. In fact, 58% of consumers prefer healthier options so that they do not have to compromise on their consumption or occasions of eating.

To help you meet that demand, we’ve collected our favorite professional bakery, patisserie, and chocolate recipes that offer customers a healthier alternative without sacrificing taste and texture.

A freshly baked Danish is a decadent breakfast or sweet pastry snack that few people can resist. 

This Blueberry Danish recipe (using our Topfil fruit fillings) boasts less sugar, less fat, and more fruit to provide an option that health-conscious consumers can enjoy.

With 58 fewer calories and 12.6g less sugar than an average muffin on the market, this healthier twist on the classic muffin makes for a guilt-free morning indulgence. 

This recipe also offers 8.7g more fiber than an average muffin, tapping into the consumer trend for more gut-friendly functional foods. 

Consumers are becoming much more conscious of their gut health and its relationship to the food they eat. 

This Baiota What Toast Bread is a flavorful loaf that’s perfect for everyday usage occasions but with added gut-friendly fibers thanks to our fermented wheat bran sourdough, Sapore Baiota.

This high-protein bread is packed with nutritional benefits. As well as 13g protein, it is high in fiber and a source of zinc, iron, and magnesium - all of which may contribute to the normal function of the immune system and boost mental health.

This recipe uses Puravita Pulses, our plant-based solution based on chickpeas. As well as added nourishment, these pulses naturally give the bread a herbal, earthy, and nutty flavor.

With its buttery sweetness and rich flavor, brioche is known as an indulgence more than a healthy choice. This recipe, however, can offer a more nutritious brioche product. 

Using Puratos’ innovative ingredients to replace butter and eggs, this brioche has 59 kcal less than an average brioche on the market. It is made with almost 6g less fat and sugar and 3.2g more fibers than traditional brioche without sacrificing the flavor and texture consumers love.

This finely textured sponge cake from Japan is the perfect treat to accompany a hot drink any time of the day. 

Though typically made with sugar and honey, our recipe uses a combination of Puratos products to reduce the sugar content by 30% without adding any artificial flavor, color, or preservatives.

This healthier recipe is made with 30% less sugar than a regular black forest cake that tastes just as incredible.

It uses our Topfil Agrumes (a fruit-filling blend of mandarin, orange, grapefruit, lemon, and Yuzu, with 77% citrus fruit) to add a creative twist and depth of citrus flavor whilst also delivering on the consumer’s desire for natural fruit-based patisserie options.

Not only is this beetroot burger recipe a stunningly vibrant dish to wow customers with, but it also packs in added health benefits too. Our butter alternative, Mimetic Incorporation, is free of non-hydrogenated fats, completely plant-based, and has no artificial flavor or color.

Key facts from our latest health and well-being report

  1. In 2022, our innovations enabled a 1,456-ton reduction in the amount of sugar in bakery, patisserie, and chocolate products (the equivalent of more than eight million sugar dispensers!). This has resulted in a 31% year-on-year decrease in sugar in the market since 2016.

  2. We removed 12,503 tons of fat (the equivalent of more than 14 million bottles of oil) in 2022. This resulted in a 26% increase in fat removed from the market since 2016 (year-on-year).

  3. We removed 126 tons of salt (the equivalent of more than a million saltshakers) a further decrease of 15% versus 2021.
