Working Method

Melt the Belcolade Selection Lait Cacao-Trace Sugar Reduced till 45°C together with the Patisfrance Pralirex Noisette, Belcolade Pure Prime Pressed Cocoa Butter and oil.   

Temper this composition till 31° C, put into a espuma sifon/whipped cream dispenser.

Put in a mold (bar) that is thin molded with Belcolade Selection Noir Pur Amer 73.

Leave to crystallize for 12 hours at a temperature of 16-18°C, humidity below 60%. Close the molds with tempered Belcolade Selection Noir Pur Amer 73.
