Health & Well-Being Éclair: Healthier Mango Éclair Recipe

More than half of global consumers would prefer to have healthier alternatives of their favorite treats to make sure they don’t have to compromise on their consumption behavior. That’s why, for a health & wellbeing éclair, we want to inspire you by adding more fruit into the éclair and by working with sugar reduced ingredients. This way, you can offer your consumers an indulgent treat with improved nutritional values!

Composition

  • Choux Paste
  • Mango Filling
  • Sugar Reduced Chocolate
  • Custard

Choux Paste

Ingredients

Working Method

In a mixing bowl with a paddle attachment, mix all ingredients together at high speed for five minutes

Pipe in between 20-30 grams per choux

Mango Filling

Pipe in 25 grams per choux

Sugar Reduced Chocolate Custard

Working Method

In the mixing bowl with a whisk attachment, mix the Cremyvit SR and water together at high speed for five minutes.

Melt the chocolate to 35ºC and pour it into the mixing bowl.

Pipe 15-20 gr per éclair.

Coating

Bring the Festipak and glucose to 80°C

Pour over the chocolate.

Use an immersion blender to create a good emulsion.

Use around 30-32°C

Assembling

Cut a long rectangular hole in the bottom of the éclairs, and pipe 25gr of Topfil Finest Mango 70% filling first, and then pipe 20gr of chocolate custard on top of the mango filling.

Warm up the chocolate coating between 28 to 32°C and dip the éclair into it.

Decorate it with dried mango stripes.
