Softr Melting

As the end of the year fast approaches and the magic of the festive season fills the air, take the time to prepare for the festivities with brioche de Limoux. Discover this classic recipe that holds a significant role in the Epiphany/3kings day celebrations in Southern France. With Soft’r Melting, Mimetic and Sapore, Brioche de Limoux has a wonderfully soft and melting texture and a blend of fruity and creamy flavors. 



Prefermented dough

Mix all the ingredient together 6' slow and 5' fast. Give 60' of bulk 30°C and 85% humidity.


Mix the sugar and the milk. Mix the Egg Yolk together with the CPT. Heat the milk until just boiling, add to the preparation and whip. Put again on the heater until just boiling. Pour on a tray with clean film, cover and freeze for 10'. Reserve in the fridge till "Final Layout" step.
