Yellow: Take out 425 g of dough 2 min before the end and mix with 2 g of yellow colorant, diluted with a couple drops of water
Glaze with syrup. Slice open and put a thin layer of Topfil Apple and Cinnamon, top it with the diplomat cream and close the croissant. Pipe some cream on it and sprinkle with speculoos chunks.
