  • Milk - 1000 g 
  • Cream 35% - 100 g 
  • Sugar - 30 g 
  • Lemon zest - 2 g 
  • PatisFrance Starfruit Strawberry - 150 g 
  • Belcolade Origins Vietnam 73 - 300 g

Working method

  • Heat up the cream, milk, lemon zest and sugar. 
  • Pour onto the chocolate and mix to obtain a smooth texture. 
  • Heat up the strawberry juice, add it and mix again. 
  • Serve at 80°C.

Serving tip

Serve in a glass and put a thin disk of chocolate on top. This will melt.


Serve with some fresh strawberry.
