Recipe: Puravita Pulses Crusty Rolls

Crusty rolls are a great classic! To decline them into a plant-based version alternative, discover Puravita Pulses. With Puravita pulses, you can bake fantastic crusty rolls full of taste and delicious grains. To make the rolls even better, we ask our Puravita baker Wouter to add his pro-tip.

Ingredients:

  • TEGRAL PURAVITA PULSES – 800g
  • Flour – 200g
  • Water – 550g
  • Yeast – 40g
  • S500 – 5g

Working Method:

  1. Place all the ingredients in a mixing bowl.
  2. Mix for 6’ in first speed and 5’ in second speed.
  3. Dough temperature should be at 24°C.
  4. After mixing, let the dough bulk proof for 15 minutes at room temperature.
  5. Scale little pieces of 40g of dough and round them up.
  6. Intermediate proof: rest for 10 minutes at room temperature.
  7. Make-up: Round up and place on a floured couch.
  8. Tip: You can always put a small piece of butter inside the dough when you round up. Turn the pieces upside down before baking, with the closing lit up. Dust a little bit of rye flour and you will have a nice flower shape after baking.
  9. Final fermentation: proof the rolls for 60 minutes at 28°C, with 80%RH.
  10. Decoration: Dust with rye flour and cut once in the middle or in an X-shape.
  11. Baking: 18 minutes at 230°C.
