Recipe: Puravita Pulses Toast

Toast bread is one of the most classic and most consumed bread on the market. So how can you differentiate yours in the eyes of the consumer? Discover how our Puravita Baker Wouter has given your classic toast bread a modern twist with Puravita Pulses. Wouter also included his tips to bake fantastic plant-based bread full of taste and delicious grains.

Ingredients:

  • TEGRAL PURAVITA PULSES – 1000g
  • Water – 600g
  • Yeast – 20g

Working Method:

  1. Mix Puravita Pulses with the water and yeast.
  2. Mix for 6’ in first speed and 5’ in second speed.
  3. The dough temperature should be at 24°C.
  4. After mixing, let the dough bulk proof for 30 minutes at room temperature.
  5. Scaling: scale pieces of 550g and make them round.
  6. Intermediate proof: let the dough proof for another 15 minutes at room temperature.
  7. Make-up: Make up the pieces in a long shape and place them in toast trays.
  8. Tip: You can also cut your dough pieces into 4 equal pieces after making them up. Place the 4 pieces next to each other in the toast trays. This will help you obtain a finer crumb structure after baking.
  9. Final fermentation: proof the bread for 60 minutes at 28°C, with 80%RH.
  10. Oven temperature: 230°C and let the temperature fall to 215°C after 10 minutes.
  11. Total baking time: 25 minutes.
