When mixing bigger doughs, please pay attention with mixing time.
Proof until you still have a litle bit of strenght in your dough, so you have a better oven jump during baking.
Working Method:
Spiral Mixing:
Autolyse: mix the puravita sprouted grains & flour with 58% of the water for 3 min and let rest for 30 min.
Add yeast and mix for 6' in 1st speed & 5' 2nd speed. Add rest of the water the last 2 minutes of mixing.
Dough Temperature:
25 °C
Bulk fermentation
30 min. rest in bulk at ambient temperature.
Scale:
600g
Intermediate Proof:
Round up and rest 30 min. at ambient temperature.
Make up:
Round up and put on couch.
Final fermentation:
45 to 60 min. at 28°C and 80% humity.
Decoration before baking:
Cut in a X.
Oven temperature °C
240°C - go down to 220°C. Add initial steam
Baking time
35 min., open damper the last 5 min.
