Recipe

Imported from Sweden to USA, a Cinnamon Roll (also known as a cinnamon bun, cinnamon swirl and cinnamon snail) is a sweet pastry commonly served in Northern Europe and North America.

Ingredients

Dough ingredients 

  • 100 of Tegral Cinnamon Roll
  • 40% of water (+/-)  680
  • 3% of fresh yeast (If dry yeast 1,5) 

for a Dough total of 2431g

Decoration ingredients

Cinnamon filling

  • 400g of Aristo Cake 
  • 520 of Brown sugar 
  • 520 of Sugar 
  • 200 of Pastry flour 
  • 210 of Hot water 
  • 140 of Cinnamon 
  • 10 of Salt 

Icing

  • Puratop Deco Icing White

Decoration preparation

  1. Soften the Aristo Primeur Cake. Place in a bowl along with all other dry elements.
  2. Mix 1 min. slow - 2 min. medium. Scrape down. Begin slow incorporation of the hot water until it is all in
  3. the mixture. Mix 1 min. slow - 3 min. medium.

Working method

You can add Cremfil Ultim Chocolate, which is a bake stable filling, to your regular cinnamon fillings.
