A week in the life of Technical Advisor Waldo Deroo

Puratos’ international Technical Advisor Bakery, Waldo Deroo, travels around the globe to assist, train and inspire customers and colleagues in the use of Puratos products. To give you an impression of his work, Deroo captured a week of his working life in text and photos.

Workshops in Toronto

For an International Advisor Bakery, work is never monotonous. When not traveling abroad, Deroo spends his time at the Puratos headquarters in Brussels or in the Centre for Bread Flavour in St Vith. He develops recipes, gives demonstrations and workshops to customers visiting the Innovation Centre and also organizes global and regional seminars for Technical Advisors in Bakery.  And around 16 weeks a year, he travels the globe. Most of his trips lead him to South America, but this time his plane headed to Canada.

“On 14 May, I left Brussels for a trip to Toronto , Canada. The mission of my trip: giving workshops to Puratos customers, to inspire them and to present them with new products that can easily be integrated in their production process. But also to inspire my Canadian colleagues with new products and with my way of working.”

“This was my first visit to Canada. Even after all these years of travelling, I’m still always excited when I visit a country for the first time. I arrived in Toronto on Sunday afternoon, leaving enough time to a colleague to kindly take me on a tour around the city.”

International Snacking

“For two consecutive days I gave workshops to our customers on the theme of ‘International Snacking’. Before putting our hands in the dough, I always tell participants how the day is organized and how the workshop is structured. So they know what to expect, what the objectives are and what our time schedule is going to be.”

Explaining the process

“It’s important to make sure all participants are fully involved. I ensure this by explaining everything I do and asking the audience questions. My favourite part is explaining the process step by step, in a way that everybody understands. This needs to be well prepared: when preparing the dough, you only get one chance to do it right.”

Boosting innovation

“On my last day in Canada, me and my Canadian colleagues gathered inspiration for the Puratos Canada's seasonal catalogue. Each of us made different products which we then presented to each other. This enabled us to train our presentation skills and we boost innovation within the team. I’m sure some of the end products will go viral by the end of the year!”

On the road again

“After the creative session with my Canadian colleagues I had to rush to get to the airport on time. Travelling around 16 weeks a year, I prefer to fly home on Friday evening, so I can spend the whole weekend with my family.”
