Sustainable cocoa has evolved drastically over the past decade. It went from a focus on certification and compliance to a model that combines chocolate quality, traceability, and direct impact for cocoa farmers. Leading sustainable cocoa programs go beyond responsible sourcing by improving how cocoa is produced, processed, and valued across the supply chain.
One of the biggest shifts in sustainable cocoa has been the increased control and professionalization of cocoa fermentation and post-harvest practices. While fermentation has always been essential to cocoa processing, it was traditionally inconsistent and managed at farm level.
Today, our 29 dedicated post-harvest centers and trained specialists ensure controlled fermentation and drying, resulting in more consistent cocoa quality, improved chocolate flavor, and greater value creation across the supply chain.
At the same time, sustainable cocoa has moved towards measurable farmer impact. Instead of relying only on premiums, newer models link chocolate sales directly to farmer income and community development. For example, value-sharing mechanisms such as the Chocolate Bonus ensure that a fixed amount per kilo of chocolate is completely returned to cocoa-farming communities.
Over the past 10 years, this approach has supported more than 31,795 farmer families, redistributed over €13 million, and contributed to real improvements such as schools, water access, and healthcare initiatives.
