Puratos sponsors the first international Cake Symposium, hosted by the Katholieke Universiteit Leuven, and taking place in Leuven, Belgium on March 26-27, 2012
The large number of ingredients in cakes and the widely varying production methods result in a wide range of cake types. Although cakes gain economic importance worldwide, not much is known neither about ingredient functionality in cake systems nor about the chemical and physical processes during cake making.
The dynamics in this challenging field clearly justify the organisation of a first international Cake Symposium. Indeed, it is timely to provide a forum where researchers and technologists can share recent progress and insights in the broad area of cakes. Therefore, we are very pleased to announce that some of the most international recognized scientists with expertise in the complex world of cakes will offer you an elaborate and varying scientific programme which is endorsed by ICC , AACC International , LFoRCe and Puratos.
Amongst others, the following topics will be discussed: ingredients and their functionality, cake types, aspects of cake quality and cakes on the shelf.
