Method

Temper the Belcolade Selection Amber Cacao-Trace and Belcolade Selection Blanc Cacao-Trace. Colour your figure with a cornet. Temper the Belcolade Selection Noir Sugar Reduced Cacao-Trace and mould the deer 3 times very thin. Leave the chocolate to crystalize. Remove the mould.
